When overseas, we always crave for home food. Egg tart is one of the food we miss. It's one food item which everyone in the family misses. Hence, when I saw this recipe (cheater's version) at <a href="http://en.christinesrecipes.com/2010/08/egg-custard-pastries-cheating-version.html">Christine's</a>, I was more than happy to give it a try!<br />

I had baked these egg tarts a couple of times. The first time, I had used Filo Pastry. The egg custard tasted good, but the base of the tart is a far cry from what we are used to having. It's kind of strange to have a "popiah" kind of bsase for an egg tart! Still, we are not overly picker eaters, so we were happy to have a taste of home.<br />

One day, I had a leftover piece of puff pastry. I decided I should try baking egg tarts using puff pastry instead of filo pastry. Ok, the pastry puffed so much that the egg custard was hardly visible. But we definitely prefer the puff pastry base as compared to the filo base!<br />

<b>Ingredients for egg custard:</b><br />

100ml Whipping Cream<br />
75ml Milk @ room temperature<br />
40g Castor Sugar<br />

<li>In a saucepan, mix cream with milk. Add sugar.</li>
<li>Under low heat, stir till sugar dissolves. </li>
<li>Let cool completely. </li>
<li>Stir in egg yolks and flour. Combine well.</li>
<li>Drain through a sieve and set aside. </li>

<li>Thaw the puff pastry as per the instructions on the box.</li>
<li>Cut into squares. </li>
<li>Using a rolling pin, flatten each square as much as you can.</li>

<li>Place each "stretched" piece of puff pastry into the muffin pan.</li>
<li>Make sure the pastry covers the rim, or the liquid custard will overflow and go under the pastry. </li>
<li>When done covering the muffin pan with the puff pastry, pour the egg custard mixture over.</li>
<li>Fill each muffin hole to half or slightly more. </li>
<li>When overfilled, the custard will take a longer time to cook, and the pastry base may be burnt by the time the custard is baked. </li>

This recipe yields a soft custard centre. The egg custard goes very well with the soft, puffy base, and especially so when served warm. My boy saw me typing this post and asked me "When are you making egg tarts again?". Soon, my dear, when the heat wave is over. Mom is not even cooking in this heat! To bake in the tiny kitchen will be suicidal.<br />

Hubby is a fan of the NBA Games. He will faithfully follow the games every season. So what is staying in the woods without a visit to the game centre to catch at least one NBA game? For this season, we could either catch the New York Knicks in Chicago (against the Chicago Bulls), or in Milwaukee, against the Milwaukee Bucks. Milwaukee is definitely nearer for us than Chicago. The thought of getting through the traffic mess in Chicago is enough to put us off, not to mention having to pay more for the tickets.<br />
<br />
So off we went, on a Friday afternoon, immediately after picking the kids up from school. The kids were excited about going to watch a NBA LIVE game. The little one even said "I'm going to make a poster for the Milwaukee Bucks! I'm supporting the Bucks since Pa is supporting Knicks!".<br />
<br />
Getting to Bradley Centre was not as bad as we thought, although there was a long line of cars trying to get into the car parks. I was very glad that Hubby had the foresight to purchase a parking coupon in advance. Even though we were there on time, the car park was almost filled. We had to go all the way to the topmost floor to park.<br />

Hubby bought tickets for seats at the section behind the Knicks. Fans of Knicks were cheering loudly for their team throughout the game. It was a treat to be able to see the players and game up close! I had a great time watching the game, although a little disappointed with the way Knicks played. At half time, we were all wowed by the cyclists and their amazing stunts. Very impressive. And my little boy was happily holding onto the free gift he received at the entrance throughout the game ... a Brandon Jennings Bobblehead.<br />

A little fan of Bucks cheering for his team! We left a couple of seconds before the game ended. Knicks was playing so badly, that we knew there was no chance for extra time. In a way, it was good, as it was almost 10pm, and the kids were tired and sleepy. It was almost midnight when we arrived home. A tiring but memorial day for me and the kids, as this was our very first attendance at a NBA game =D<br />

Happy Halloween! Although we have been in the woods for three years, this is the first time the boys put on a halloween outfit and go "Trick or Treat" with their friends! We started early at 5pm, thinking that we could end by 630pm. The boys were so happy that they wanted to go to another part of the neighbourhood. And so, we extended the fun by another hour. They sure were happy and tired the next day, since they went to bed later than usual.<br />

I have a friend living in another state who painted all her pumpkins ... Red, black, and yellow. Ok, rather, she got her boys to paint the pumpkins, since she's heavily pregnant. She turned the orange pumpkins into Angry Birds! And there were logs of wood for her "pumpkin" birds to sit on!<br />

No. It requires the kid to know how to convert the fractions to improper fractions, to know how to multiply, to divide, then convert from improper to proper fractions. So I had to spend some time teaching my boy all the above and let him do a few extra questions to make sure he really understood what was going on. The level of disgust definitely went up a notch. Instead, I used my mini halloween cat cutter and cut out the cat from a slice of cheese. That was easy. Then the words "BOO". I don't see a point in "undoing" the rice skull, so I just left the cat and words on top of it. Better cute than cool, right? They love the gravy in their rice. And I'm sure my father-in-law will like this dish too, as the chicken is cooked till very soft. Add more water to get about 10oz of fluid. Set aside the water for later use.</li><li>In a pot, if you have a big one, add the sesame and cooking oil. They are heavy-duty wall plants that cannot be vaulted over. </div><div><br /></div><div>Why so many nuts and potato? Because one son requested for Wall-Nut, while the other wanted Tall-Nut. So I gave them both, and included a third ... The challenging part lies in shaping the nuts and potato, and hoping that the shape stays while it cooks in the hot pan. Take a closer look at the second photo, and you will find that Mr Potato-Mine looks quite different. A little too round. </div><div><br /></div><div>I was very happy to finished cooking all the patties, in different shapes and sizes by 7.45am. I thought cutting the cheese eyes, and putting them into the lunchbox should be a breeze. Wrong. It had been a while since I prepared food with "eyes" attached, and I panicked when I realised the cheese eyes wouldn't stick to the patties! It took me a while to attach them using short sticks of uncooked angel's hair. Can you see the stick poking out from the eyes in the above photo? So to draw the attention away from the poking through sticks, I added ribbon and cap to Wall-Nut and Tall-Nut. He didn't like the chicken soboro which I prepared, although he politely ate a portion, and left a portion to be brought home. Neither did his little brother, who stayed home with me the whole day, since I didn't enroll him to any pre-school. </div><div><br /></div><div>Since it was time to introduce some new dishes into the boys' packed lunch, I thought I could try including this dish. After all, it had been three years since they "Dislike" the dish. As the kids get older, their taste and preference change, don't they? In any way, when you are hungry and need to eat, you eat whatever that is packed. Ok, that's my crazy theory, and I'm putting it to test by including Egg and Chicken Soboro in the boys' packed lunch today! </div><div><br /></div><div><b><i>Recipe adapted from THE JUST BENTO COOKBOOK by Makiko Itoh.</i></b></div><div><br /></div><div><b>Chicken Soboro</b> (Serves 6-8)</div><div><br /></div><div>450g <span class="Apple-tab-span" style="white-space:pre"> </span>Finely Ground Chicken </div><div>2 tsp<span class="Apple-tab-span" style="white-space:pre"> </span>Peeled and Grated Fresh Ginger (I use Ground Ginger, just a dash)</div><div>4 tbsp<span class="Apple-tab-span" style="white-space:pre"> </span>Sake (I replace with Shaoxing)</div><div>4 tbsp<span class="Apple-tab-span" style="white-space:pre"> </span>Mirin</div><div>1/2 cup<span class="Apple-tab-span" style="white-space:pre"> </span>Chicken Stock</div><div>1/2 tsp<span class="Apple-tab-span" style="white-space:pre"> </span>Salt</div><div>2 tbsp<span class="Apple-tab-span" style="white-space:pre"> </span>Sugar</div><div><br /></div><div><ul><li>Put all ingredients in a saucepan over medium heat.</li><li>Using two pairs of chopsticks held together, stir the meat mixture as it cooks.</li><li>Keep stirring to keep the meat from clumping.</li><li>The liquid will evaporate as the meat continue to cook.</li><li>Remove the pan from the heat when the meat is cooked, and the liquid is almost gone but not totally dry.</li><li>Let cool the meat before packing.</li></ul></div><div><br /></div><div>According to the book, extra servings can be kept in the refrigerator, well covered, for a week, and in the freezer for up to a month. I halved the portion as 450g of minced chicken was just too much for us to consume. The boys finished all the chicken soboro in their lunch! No complaints from them. Kids 9 and above, adults too, need at least 1000mg/day. I'm very sure that with an asian diet, we are not meeting the daily calcium intake. The boys drink a cup of milk every morning. But that is not enough. So I try to include some cheese into their lunch, a smoothie or another cup of milk after school, and a serving of yogurt after dinner. I strongly believe that what you eat as a kid determines your health as an adult. Good eating habits start from young. </div><div><br /></div><div>And so, I happily cut out 6 skulls from a slice of cheese! Since I couldn't get my hands on this set of stamps, I thought it would be a good idea to "borrow" one of the image and include it in the boys' bento. The original phantom was holding an axe! I don't want to promote violence in school. So I have the phantom holding a leaf instead of an axe! I put too little sauce when marinating the meat, and after pan frying them, I added a little more to taste. I had the leftover for lunch, and it tasted good even though it was cold. But I had a blast creating the faces of these zombies! Guilty, guilty. And Darling son KW told me, during lunch yesterday, his friend G was so taken in by the Red Bird, he decided to create his own using the tortilla from his Hot Lunch! </div><div>My mom would say "That's playing with food!". So I asked my boy if his friend finished up his lunch after "creating the bird". He said YES, phew! </div><div>I don't want G's mom to come after me for indirectly teaching her son to "play with food". </div><div><br /></div><div>But it may not be a bad thing after all! I mean, playing with your food. </div><div>As long as one remembers to eat it all up. It helps the boys to see things at a different perspective, and encourages them to think out of the box. </div><div><br /></div><div>At times, when my boys request for a certain character to be included in their lunchbox, I will tell them "Sorry to disappoint you, but I don't have the colour to do that. And I don't want to use food colouring". They will, most of the time, come out with all kinds of ideas and suggestions. Just this afternoon, KW suggested using the Japanese Cheesecake I just baked to create a catapult! He explained to me "See, the top of the cake is brown. Just like the stand. You don't have to worry about the colour. Just cut the stand. Then you cut a nori strip. Put them together and TADA!". It had to be quick and simple, as Darling son KW had an appointment with the Orthodontist at 815am! I woke up really early to start cooking, hoping to finish packing his lunch by 730am. These Japanese fishcakes were easy to cook. All that was left to do after cooking them was to put the expressions on the faces of the zombies. And KW came home very happy, not because of the zombies, but because the Orthodontist told him he need not wear the retainer at night till his tooth has emerged! I am happy for him too. Adults find it hard to wear it, what more kids. Getting a good night's sleep is very important for growing kids. </div><div><br /></div><div>I really hope that his tooth come out well. Gosh, I thought the rice bird will not take up too much space in the box. How wrong! I had a tough time trying to press the rice and compact it so that I would have enough space for the other items! Just to play safe, I sketched a picture of the pigs and stuck the paper on the kitchen wall! Well, I changed the boys' lunchbox from a Lock&Lock box to a bigger stainless steel box. With the bigger capacity, I need to be sure that I have enough food in the container. Too little, the contents will move and their lunch will end up in a mess when they open their lunchbox.
